So what do you eat when you’re touring without a fridge and having to lug your pantry with you? We are about a third of the way through our trip and breakfast is the only meal we have down to a science, along with snacks. We need food with a punch, something light weight but heavy in calories. For snacks we go for dried fruit, Cliff bars, and a chocolate and nut combo (usually M-n-Ms). We tried hauling fresh fruit with us but it cuts a lot of weight to stick with dried fruit and pack the fresh for when we don’t have far to go. Cliff bars are our manna, we could probably survive on those alone but it helps to switch things up with M-n-Ms. Peanut M-n-Ms or something of the like are great in packing in calories as well as filling our stomachs.
Our breakfasts are either Quaker oatmeal packets or pancakes. We don’t have a cooling system of any kind with us. On our test ride we took a small cooler but decided to scratch it for this trip. To get around the milk and eggs needed for pancakes we use dried milk and oil. Syrup is too risky to spill or leak so we mix in lots of chocolate chips. They taste pretty good as a morning snack too, even if it is cold, but maybe we're just that hungry.
Yield 1 person
1 cup Bisquick
1 tablespoon powdered milk
1 tablespoon oil
2/3 cup water (or a till a good consistency)
Chocolate chips
We are in Lander, WY tonight. On our ride here from Dubious we passed a French couple on their way to Canada. They were pedaling a tandem with a trailer. We forgot to ask where they started but their whole trek will take a year. About a week ago we past two other Frenchmen also on their way to Canada. We have been seeing more foreign riders than American.
Jake Report Day 30:
Miles: 79.0, time on bike: 6h 16m, average: 12.6, total miles to date: 1474, weather: cool, cloudy, no wind (it was forecasted to have 11-13 mph headwinds, what a blessing that they never came)
